Steamed Scallops with Olive Oil
Delicious, sweet and flavorful scallops are possible by simply using the microwave

[4 Servings]    Cooking time: 15 minutes
 

1 pound frozen scallops (about 16 pieces)
1/2 teaspoon salt
1/4 cup green onions, cut into 2-inch long strips and sliced length-wise
2 tablespoons fresh basil leaves, chopped
1 1/2 tablespoons lemon juice
2 teaspoons olive oil
1/8 teaspoon pepper

Photo of frozen scallops to be defrosted by a microwave oven. 1. Place a paper towel on a microwave safe plate and arrange the frozen scallops around the perimeter. Defrost the scallops for 4 minutes on LOW (30%). Defrost the scallops only halfway. If defrosted too long, the scallops will start cooking.

Photo of slicing scallops. 2. Blot excess water with a paper towel. Slice each scallop into 3-4 pieces.

3. Divide the sliced scallops equally on 4 individual microwave safe plates for each serving. Sprinkle each serving with salt, green onion strips, and basil.

Photo of steamed scallops. 4. Sprinkle lemon juice and olive oil over the scallops. Cook 2 minutes on HIGH (1200W). You do not need to cover the plates, but arrange them so that the center of the turntable is empty.

5. Take the plates out and sprinkle with pepper and serve.
