Sardines with Ginger
Easy to prepare and very healthful

[4 servings]    Cooking time: 5 minutes
 

2 cans (2.47 oz. each) sardines in oil
1 tablespoon gingerroot, coarsely chopped
1 teaspoon garlic, chopped
2 tablespoons parsley, chopped
1-2 teaspoons soy sauce
1/2 lemon

Photo of sardines made ready for microwave cooking. 1. Place the sardines on a microwave-safe plate (10 inches in diameter). Top the sardines with chopped ginger root, garlic and parsley. Drizzle the sardine oil from the can, over all.

2. Cover with a microwave lid and cook on HIGH(1200W) for 1 minute.

3. Season with soy sauce.

4. Squeeze lemon juice over sardines and serve.

* When using plastic wrap as a cover, poke a hole in the center to release the steam.
