Spicy Tofu
Curry and soy sauce blend to create this exotic flavored tofu recipe

[4 Servings]    Cooking time: 20 minutes
 

1 pound tofu
1/4 pound very lean ground beef
1 large tomato, cored and cut into 8 - 12 wedges (1/2 lb.)
1 bunch of watercress sprigs, cut 1/2 inch long

< Sauce >
2 tablespoons soy sauce
2 tablespoons white wine
1 tablespoon sugar
1 teaspoon curry powder
1/2 teaspoon Tabasco sauce

1. Place the tofu in a microwave-safe, shallow bowl (3 quart) and cut into 12 cubes.

2. Place the tomato slices on top of the tofu.

Photo of Spooning mixture of sauce and ground beef around the Tofu. 3. Blend all of the <Sauce> ingredients in a bowl. Add the ground beef to the sauce and mix. Spoon the ground beef mixture around the perimeter of the tofu cubes.

4. Cover the dish with a vented microwave lid and cook on HIGH (1200W) for 10 – 12 minutes.*

5. Spoon the beef sauce over the top of the tofu and garnish with watercress sprigs.

* When using plastic wrap as a cover, poke a hole in the center to release the steam.
