Marinated Mushrooms
Everyone will love this fresh taste of mushrooms

[4 Servings]    Cooking time: 15 minutes (excluding resting time)
 

6 cups of mushrooms (such as white mushrooms, crimini mushrooms, maitake mushrooms), cut into 2 - 3 slices.
1 cup red and orange bell peppers, seeded and sliced.

< Marinade >
1/2 cup water
1/3 cup vinegar
1/2 cup sugar
2 tablespoons soy sauce
1 red chili pepper seeded and sliced in half
1 bay leaf

Photo of sliced mushrooms and bell peppers in a microwave-safe bowl 1. Place the mushrooms and bell peppers in a microwave-safe bowl (4 liter or 4 quart).

2. In a separate bowl, place all the marinade ingredients and mix well until the sugar completely dissolves. Pour the marinade over the mushrooms.

3. Cover with a vented microwave lid. Cook on HIGH (1200W) for 8 – 10 minutes.

4. Take out and mix. Let stand 10 – 12 minutes. Remove the bay leave and serve.

* When using plastic wrap for a lid, poke a hole in the center to release the steam.
* Mushrooms are high in vitamin D, which enhances building bone cells and they are low in calories. <Marinated Mushrooms> can be stored in the refrigerator for up to 1 month. Why not make double the amount and store them?
