Crispy Lettuce Salad with Tofu Dressing
Tofu and avocado create a delicious dressing

[4 Servings]    Cooking time: 15 minutes
 

1 large head lettuce, torn into large bite size pieces (14 oz.)
1/4 cup chives or green onions, cut 2-inches long, then sliced length-wise
1/2 cup Tofu dressing

< Tofu Dressing >

1/3 pound tofu
2 1/2 ounces cream cheese
2 tablespoons sugar
1/4 cup mayonnaise
3 tablespoons lemon juice
1 clove of garlic
1/3 cup salad oil
1/2 cup water
10 fresh basil leaves
2 teaspoons salt
1/8 teaspoon pepper

1. Place all the <Tofu Dressing> ingredients in a blender or food processor and whirl until smooth.

2. Wash the lettuce, drain well and keep cold until you are ready to serve.

3. Before serving, sprinkle chives or green onions over the lettuce and serve with the Tofu dressing.

4. You may garnish Tofu dressing with additional chives.

* Tofu Dressing can be served as a favorite party dip for crackers or chips. You can store it for up to one week in the refrigerator.
