Classic Caesar Salad with Soft Boiled Eggs
A tasty combination of crisp bacon, soft boiled eggs and cheese dressing.

[4 servings]    Cooking time: 10 minutes
 

1 head (1 lb.) Romaine lettuce, washed, dried and cut into 2 inch pieces
4 slices bacon
2 eggs
2 tablespoons parsley, finely chopped
1/2 cup garlic croutons

< Parmesan Dressing >
1 tablespoon vinegar
3 tablespoons olive oil
1/2 teaspoon salt
1 teaspoon dry mustard
1/8 teaspoon pepper
2 tablespoons grated Parmesan cheese

Cover with a paper towel. Cook on HIGH(1200W) for 2 – 3 minutes or until the bacon becomes crispy. Absorb the fat with paper towels. Cut the bacon in 1/2-inch lengths.

Pierce the yoke with a toothpick ( to keep it from bursting) and cook on HIGH(1200W) for 50 – 60 seconds or until the eggs are lightly poached.

3. Combine the dressing ingredients and eggs in a bowl and mix until eggs are blended. Add lettuce, bacon, chopped parsley, and garlic croutons. Toss gently until the lettuce is coated with dressing. Divide onto 4 plates and serve.
