Sachi's Special Sukiyaki and Lettuce Salad
This is a combination of fresh vegetables with hot Sukiyaki beef and tofu

[4 Servings]    Cooking time: 20 minutes
 

< Sukiyaki >
1 pound tofu, cut into 1 x 2 inch cubes
1/4 pound sirloin or flank beef steak, cut into 2-inch long paper-thin strips*
1 medium onion, cut into 1/2 inch wedges
2 whole eggs

< Sukiyaki Sauce >
1/4 cup soy sauce
1/4 cup sugar
1/4 cup white wine or sake

< Vegetables >
3 cups lettuce washed and torn into bite-size pieces
1 cup zucchini cut into 1/8-inch thick slices
1 cup tomato, cored and cut into 1/4-inch cubes

Photo of ingredients of Sukiyaki made ready for microwave cooking 1. Combine all the <Sukiyaki> sauce ingredients and mix in a 3-quart size casserole. Add meat strips and onion pieces to the sauce. Place tofu in the center of the casserole.

2. Cover with a vented microwave lid and cook at HIGH (1200W) for 8 - 10 minutes.* Remove from the microwave. Make sure the meat is cooked.

4. Place the vegetables on a heated serving plate, pour the warm sukiyaki sauce over them, and serve.

* To cut flank steak very thin, have it partially frozen.
* When using plastic wrap as a cover, poke a hole in the center to release the steam.
