Goma Ohitashi with Oyster Sesame Dressing
An exotic and juicy spinach salad

[4 Servings]    Cooking time: 15 minutes
 

2 bunches (1 1/2 lbs.) of spinach, washed, stemmed, and cut into 2-inch lengths
1 teaspoon sesame seeds

< Oyster Sesame Dressing >
1 tablespoon Oyster sauce or soy sauce
1/2 tablespoon soy sauce
1 tablespoon white wine
1 tablespoon sesame oil

Photo of spinach made ready for microwave cooking 1. Place the tips of the spinach leaves in first, leaving the stems on the top, in a microwave-safe bowl (4 liter or 4 quart). (This will allow the spinach to cook evenly.)

Photo of spinach cooked by a microwave oven 2. Place a fitted lid on the bowl directly on the spinach leaves. Cook on HIGH (1200W) for 6 - 7 minutes and take out.

Photo of puring water into cooked spinach. 3. Pour cold water into the bowl to cool off the spinach. Drain, squeeze the water out, and return the spinach to the bowl.

4. Mix the <Oyster Sesame Dressing> ingredients together, pour over spinach and toss. Sprinkle with sesame seeds.

* Ohitashi means lightly cooked green-leaf vegetables mixed with dressing.
