Coleslaw Vinaigrette Dressing
Sweet carrots work as an accent

[4 Servings]    Cooking time: 5 minutes
 

8 cups (2 lbs.) cabbage, sliced 2 inches long
1 cup carrots, Julienne 2 inches long

< Vinaigrette Dressing >
3 tablespoons onion, finely chopped
2 teaspoons salt
1 tablespoon sugar
1/8 teaspoon pepper
1/2 cup vinegar
1/2 cup salad oil

< Garnish >
1 tablespoon parsley, finely chopped

1. Combine the <Vinaigrette Dressing> ingredients in a bowl and mix well.

Photo of carrots made ready for microwave cooking 2. Place the carrots in a microwave-safe bowl (1 liter or 1 quart.) Cover with a vented microwave lid and cook on HIGH(1200W) for 30 seconds.

4. Garnish with parsley.

* You may add corn or diced pineapples to enhance the taste.
