Minestrone
A soup, rich with vegetable protein!

[4 Servings]    Cooking time: 30 minutes
 

1 cup canned garbanzo beans
1 cup canned kidney beans
1 cup fresh green beans, cut into 1-inch lengths
1 cup tomato, cut into 1/4-inch cubes
4 cups boiling water
2 teaspoons chicken bouillon granules or 2 cubs, crushed
1/2 teaspoon salt
1/8 teaspoon pepper

< Garnish >
1 tablespoon fresh oregano, finely chopped

Image of pouring hot water over beans and tomatoes 1. Combine the garbanzo beans, kidney beans, green beans, tomatoes and hot water in a microwave-safe bowl (3 quart).

2. Add the chicken bouillon, salt and pepper. Cover with a vented microwave lid.*

3. Cook on HIGH (1200W) for 11 - 12 minutes. After the broth boils, reduce the power to LOW (30%) and cook for 9 - 10 minutes or until the green beans become tender.

4. Divide into 4 serving bowls and sprinkle with oregano.

* When using plastic wrap as a cover, poke a hole in the center to release the steam.
