Beef and Mushroom Burger
This juicy hamburger is rich with vegetables

[4 Servings]    Cooking time: 20 minutes
 

2/3 cup onion, finely chopped
1 1/2 cup mushrooms, finely chopped
1 pound leanest ground beef
1 cup fine breadcrumbs
1/2 teaspoon thyme
1 teaspoon salt
1/8 teaspoon pepper
2 tablespoons chopped oil-packed sun dried tomatoes, well drained
1 lettuce leaf, quartered
4 hamburger buns

< Optional >
Dill pickles
Pearl onion pickles
Ketchup
Mustard
Mayonnaise

Image of mixing the ingredients of the burger.Image of ingredients of beef and mushroom burger. 1. Combine onions, mushrooms, ground beef, breadcrumbs, thyme, salt and pepper in a bowl. Mix lightly, just enough to shape hamburgers.* Shape into 4 patties.

Image of Beef and Mushroom burgers made ready for microwave cooking. 2. Place wax paper on a microwave safe plate and put the patties on it. Keep the space empty in the center of the plate.

3. Place a microwave bacon rack in the microwave oven, and center the hamburger plate on it. (This will allow the microwaves to cook from the bottom.)

4. Cover with a microwave lid and cook on HIGH (1200W) for 9 - 10 minutes. Stick a toothpick into the meat. If clear juice comes out, the hamburgers are done.

5. Place the hamburgers on the buns with lettuce and oil-packed sun dried tomatoes. Serve with optional ingredients, as you desire.

* When you cook hamburger in the microwave, do not over mix the ground beef, otherwise the hamburger texture will be tough.
