Stuffed Bell Peppers
Little oil is required. Microwave cooking preserves the bell peppers' vivid colors and vitamins.

[4 Servings]    Cooking time: 30 minutes
 

2 red bell peppers, cored and cut in half
1 green bell pepper, cored and cut in half
1 yellow bell pepper, cored and cut in half
1 cup onion, thinly sliced
1 cup mushrooms without stems, coarsely chopped
1/2 cup parsley
1 tablespoon olive oil
3/4 pound leanest ground pork
1 teaspoon salt
1/8 teaspoon pepper

4-5 sprigs parsley

Image of onions, mushrooms, and psrsley placed ready for microwave cooking. 1. Place the onions, mushrooms, parsley, and olive oil in a microwave-safe bowl (2.5 liter or 2 1/2 quart.) Cover with a vented microwave lid. Cook on HIGH(1200W) for 4 minutes and let it cool.

Image of the cooked mixture chopped in a food processor. 2. Finely chop the cooled ingredients in a food processor. Add the ingredients, plus salt and pepper to the pork and mix well.

Image of stuffed bell peppers made ready for microwave cooking. 3. Place the pork mixture in the bell pepper halves. Put a paper towel or waxed paper on a microwave-safe plate. Arrange bell pepper halves around the plate, leaving the center empty. Cover with a vented microwave lid.

4. Place a bacon rack on turn table. Center the bell pepper plate on top. Cook on HIGH(1200W) for 10 – 12 minutes.

5. Serve on heated plates and garnish with parsley and ground pepper.
