Tokyo-style Meat Loaf and a delicious Tomato Salad for a complete meal

[4 Servings]    Cooking time: 30 minutes
 

< Meat Loaf >
10 ounces leanest ground beef
10 ounces leanest ground pork
4 strips (3.5oz.) bacon
6 ounces sausages
1/2 cup Panko bread crumbs
4 tablespoons milk
1 egg
1 tablespoon soy sauce
1/8 teaspoon pepper

< Tomato Salad >
2 cups tomatoes, cut bite-size
2 cups watercress, cut 1 inch long
1 cup green onion, cut 1 inch long
2 tablespoons ginger root, shredded
1 cup sprouts

< Tempura Dressing >

1 tablespoon water
1 tablespoon lemon juice
1/8 teaspoon pepper

1. Place bacon strips on greased 1-quart microwave-safe loaf pan.

2. Mix just enough to combine, the meats, bread crumbs, milk, egg, soy sauce, and pepper in a bowl. (Excessive mixing will make cooked ground meat tough.)

Image of stuffing a loaf pan with meat mixture. 3. Put half of the meat mixture in a pan. Place the sausages on top. Add the remaining meat and press into the pan. Fold bacon ends over.

Image of meat loaf made ready for microwave cooking. 4. Cover with 2 sheets of waxed paper; fasten with rubber band.

5. Place bacon rack on turn table; place loaf pan on bacon rack. Cook on HIGH(1200W) for 10 – 12 minutes. Let sit for 4 –5 minutes. Slice and serve with the tomato salad.

6. To make the <Tomato Salad>, combine all salad ingredients in bowl. In a separate bowl, combine the Tempura Dressing ingredients and mix well. Pour the dressing over the salad and toss lightly.
