Sachi's Ebi-Chili
Spicy, sweet and sour shrimp

[4 servings]    Cooking time: 10 minutes (additional 10 minutes for Couscous)
 

1 1/2 pounds shrimp
1 cup cooked green peas (fresh, frozen or canned)
2 cups couscous (See Basic Couscous)

< Sachi's Chili Sauce >

2 cups onion, chopped
1 tablespoon gingerroot, finely chopped
2 teaspoons garlic, finely chopped
1 cup tomato ketchup
2 tablespoons white wine
1 teaspoon Toban Jyan sauce* or Tabasco sauce
1 teaspoon chicken granules or 1 cube, crushed
2 tablespoons cornstarch
2 cups boiling water

< Garnish >
1/4 cup watercress, cut 1 inch long

1. Peel and de-vein the shrimp.

Photo of mixing the chili sauce ingredients 2. Mix the chili sauce ingredients in a casserole (4 liter or 4 quart.) Pour in the hot water and stir until it is thickened.

Photo of shrimp made ready for microwave cooking 3. Place cooked peas in the center of the sauce (if using canned peas, add the last 1 minute of cooking). Arrange shrimp around the peas. Cover with a microwave lid.

4. Cook on HIGH(1200W) for 5 – 6 minutes. Mix well.

5. Using a bowl as a mold, fill it with hot couscous. Place a serving plate, face side down over the bowl. Invert bowl over the plate and lift off the bowl. Arrange the shrimp around the molded couscous center.

* Buy in the Asian section of the Market
* When using plastic wrap as a cover, poke a hole in the center to release the steam.
