Sweet and Sour Cod & Mushrooms
Simple, yet perfect results

[4 Servings]    Cooking time: 20 minutes
 

1 pound cod, haddock, or halibut fillets with skin removed, cut in 1 inch cubes
1 tablespoon flour
1 cup frozen, cooked mussels without shells
2 1/2 cups mushrooms, stems removed and cut in half
5 cups crimini mushrooms, stems removed and cut in half

< Thai-style Chili Sauce >

2 tablespoons rice vinegar
4 tablespoons lemon juice
2 teaspoons lemon zest
2 tablespoons sugar
1 teaspoon sesame oil
1 teaspoon La Yu (chili oil)
1 teaspoon garlic, finely chopped
1 red-hot chili pepper, sliced

< Garnish >
4 cilantro, cut 1 inch long

Image of coating cod cubes with flour 1. Put the fish in a plastic bag with the flour and shake until it is coated.

2. Combine the <Thai-style Chili Sauce> ingredients in a bowl and mix well.

3. Place the mushrooms, fish, and mussels in a 3-quart microwave casserole. Pour the Chili sauce over the ingredients and cover with a vented microwave lid. Cook on HIGH (1200W) for 14 – 15 minutes or until it comes to a boil and is thoroughly cooked.

4. Garnish with cilantro.

* When using plastic wrap as a cover, poke a hole in the center to release the steam.
