Salmon with Tomato and Soy Sauce
Enjoy the intricate taste from sweet carrots, tart tomatoes, and soy sauce

[4 Servings]    Cooking time: 20 minutes
 

1 1/2 pounds salmon fillets, skinless, cut into 4 equal servings
1 cup carrots, Julienne 2 1/2-inches long
2 medium tomatoes, each cut into 8 wedges

< Sauce >
3 tablespoons soy sauce
3 tablespoons sugar
3 tablespoons white wine

< Garnish >
3-4 tablespoon parsley, coarsely chopped

1. Combine the <Sauce> ingredients in a 3-quart casserole and mix until the sugar dissolves.

Photo of salmon and vegetables made ready for microwave cooking 2. Place the salmon pieces around the edge of the casserole in the sauce. Spoon the sauce over the salmon. Place the carrots on the fish and then the tomatoes on top.

3. Cover with a vented microwave lid and cook on HIGH(1200W) for 12 – 13 minutes.*

4. Place salmon on a plate; serve the tomatoes and carrots on the side. Garnish with parsley.

* When using plastic wrap as a cover, poke a hole in the center to release the steam.
* Enjoy the color gradation of the red tomatoes, orange carrots, and pink salmon.
