Pasta Carbonara
Low calorie pasta with cheese sauce, pancetta, and mushrooms

[4 servings]    Cooking time: 20 minutes
 

3/4 pound linguini

< Carbonara Sauce >
1 tablespoon olive oil
1/2 cup pancetta, cut 1/4 by 1 inch
1 1/2 cups crimini mushrooms, sliced
1/3 cup half & half cream
2 tablespoons Parmesan cheese, grated
4 whole eggs
1/2 teaspoon salt
1/8 teaspoon pepper

< Garnish >
4-5 basil leaves

1. Cook the linguini as directed on the package.

Image of adding olive oil over pancetta.Image of mushrooms added on the top of pancetta 2. Place olive oil and the pancetta in the bottom of a 4-quart casserole. Add the mushrooms on top. Cover with a microwave lid. Cook on HIGH(1200W) for 4 – 5 minutes.

* Pancetta and olive oil on the bottom allows efficient cooking with little oil.
* When using plastic wrap as a cover, poke a hole in the center to release the steam.
