Pasta with Spicy Sausage & Tomato Sauce
A quick and spicy pasta dish

[4 Servings]    Cooking time: 20 minutes
 

3/4 pound rigatoni
2 tablespoons grated Parmesan cheese
2 tablespoons parsley, chopped coarsely

< Spicy Sausage & Tomato Sauce >

1 cup onion, finely chopped
2 cups canned tomato sauce
2 tablespoons oil-packed sun dried, tomato, drain excess oil, and chopped
1 tablespoon olive oil
1 bay leaf
2/3 cup red wine

1. Cook rigatoni according to the instruction on the package.

2. In a microwave safe bowl (4 liter or 4 quart), place olive oil, sausage, and onion in order. Add the rest of the <Spicy Sausage & Tomato Sauce> ingredients and mix.

Image of cooked mixture of ingredients of Spicy Sausage & Tomato Sauce. 3. Cover the bowl with a vented microwave lid and cook on HIGH (1200W) for 10 - 12 minutes. Take out of the microwave and mix well. Discard the bay leaf.

4. Add the cooked rigatoni to the bowl and mix to coat thoroughly. Garnish with parsley and serve with Parmesan cheese.
