Salmon Pasta with Cold Parsley Sauce
Garden pasta with parsley, chive, basil and marjoram

[4 Servings]    Cooking time: 20 minutes
 

1/2 pound or spiral pasta
1 pound boneless, skinless, salmon cut into 1/2 x 1-inch pieces
1/3 teaspoon salt
1/8 teaspoon pepper
1/8 cup white wine
2 cups tomato, cut into chunks
12 black olives, pitted and sliced into 1/8 inch thick rings
1 1/2 cups onion, thinly sliced

< Cold Parsley Sauce >

1/3 cup vinegar
4 tablespoons parsley, chopped
1/2 cup chives or green onion, sliced
1 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon dried basil
1/2 teaspoon marjoram

1. Cook the penne or spiral pasta according to the instructions on the package. Rinse the pasta under cold running water and drain well.

2. Place all the <Cold Parsley Sauce> ingredients in a microwave safe bowl (4 liter or 4 quart) and mix until it becomes blended, then set aside.

3. Place the salmon in a 1-quart casserole, sprinkle with salt, pepper and add the wine. Cover with a vented microwave lid* and cook on HIGH (1200W) for 4 to 5 minutes. Take out the casserole and let it cool.

* When using plastic wrap as a cover, poke a hole in the center to release the steam.
