Baked Curry Noodles
Simply using a Cup of Noodles, you can make this a casserole!

[4 Servings]    Cooking time: 30 minutes
 

1 package (2.75 oz.) curry flavored Cup of Noodles
1 cup boiling water
4 teaspoons cheddar cheese
2 tablespoons parsley, chopped

< White Sauce >
1/4 cup all-purpose flour
2 tablespoons margarine or butter
2 cups low-fat milk
1/3 teaspoon salt
1/8 teaspoon pepper

1. To make the <White Sauce>, place the flour and margarine in a microwave-safe bowl (2 liter or 2 quart). Cover with a vented microwave lid and cook on HIGH (1200W) for 30 – 40 seconds.

2. Take out and stir, adding the milk gradually. As you stir, the sauce will start to thicken. Cover and cook on HIGH (1200W) for 2 minutes. Take out and stir. Cover and cook for 2 more minutes. Take out, sprinkle with salt and pepper and stir to make smooth sauce. Set aside.

5. Sprinkle with cheese and parsley. Bake in a 400F oven for 15 – 18 minutes or until cheese melts and is slightly browned.
