Tiramisu with Banana
Heavenly desert!

[Yields one 1.6-quart casserole (8 servings)]    Cooking time: 20 minutes (excluding refrigeration time)
 

< Banana Cream >
1 envelope (7 g) unflavored gelatin
3 tablespoons water
1 large banana (3.2 oz.), cut into 1/2-inch pieces
2 tablespoons sugar
1/4 cup whisky

< Custard Cream >
Sugar, 3-tablespoons + 2-tablespoons.
1 tablespoon cornstarch
1 tablespoon all-purpose flour
1 egg yolk
1/4 cup milk
1 egg white

< Cheese Cream >
6.4 ounces Mascarpone cheese
1/4 teaspoon vanilla extract
3 tablespoons whisky

< Syrup >
1/2 cup espresso coffee
1/4 cup Kahlua
1/4 cup sugar

1 package (3.6 oz.) adyfingers
2 tablespoons cocoa powder
Edible gold leaf (optional)

1. <Banana Cream>: Mix 3 tablespoons water and the gelatin in a bowl and let it rest for 1 – 2 minutes.

Place the banana, sugar and whisky in a microwave-safe bowl (1 liter or 1 quart). Cover with a vented microwave lid and cook on HIGH (1200W) for 3 minutes. Take out and add the gelatin and mix well, mashing the banana.

3. <Custard Cream>: Blend in the sugar, cornstarch and flour in a microwave-safe bowl (1 1/2 liter or 2 quart). Add the egg yolk and stir with a wire whisk until it becomes smooth. Add the milk and stir.

4. Cover with a vented microwave lid and cook on HIGH (1200W) for 1 minute, take out and stir.

Image of mixing whipped egg white with the other ingredients of custard cream. 5. Add the sugar to the egg white and whip until it becomes stiff. Mix with the other ingredients to make the custard cream.

Image of cheese cream 6. <Cheese Cream>: Cream the Mascarpone cheese and vanilla extract.

7. Blend <Banana Cream> and <Custard Cream> to mascarpone cheese mix. Add whisky for flavor.

8. Make the <Syrup> and dip in 1/2 the package of the ladyfingers. Place them in a casserole dish in a row.

Image of Tiramisu made ready for refrigerating. 9. Spread over 1/2 of cream mixture. Dip the remaining ladyfingers into the <Syrup> and layer over the cream mixture. Spread remaining cream mixture over the top.

10. Refrigerate for 2 hours. Sprinkle with cocoa powder. Transfer to each serving plate and garnish with gold leaf if desired.
