Sachi's Special Curry Sauce
A good smooth basic curry sauce

[Makes 3 cups]    Cooking time: 10 minutes

2 teaspoons garlic, minced
1 bay leaf
1/8 cup salad oil
1/4 cup all-purpose flour
2 tablespoons curry powder
1 teaspoon ground cinnamon
1/4 teaspoon crushed red pepper
1 teaspoon Garam Masala (optional)
1 teaspoon salt
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
1 tablespoon tomato ketchup
2 cups boiling water

1. Place onion, garlic, bay leaf and salad oil in a microwave-safe bowl (2 1/2 liter or 2 1/2 quart) and mix.

2. Cover with a vented microwave lid and cook on HIGH (1200W) for 1 minute.

3. Take out and stir.

4. Add flour, curry powder, cinnamon, crushed red pepper and Garam Masala (optional) and stir.

5. Cover and cook on HIGH (1200W) for 1 minute.

6. Take out and stir until it reaches full flavor.

7. Add salt, soy sauce, Worcestershire sauce, tomato ketchup and stir until it becomes smooth.

8. Add 1/2 cup of boiling water at a time until all the water has been used. Stir until it becomes smooth.

9. Cover and cook on HIGH (1200W) for 2 minutes to finish. Remove bay leaf.
