Tomato Sauce
Microwave cooking only uses 1/4 of the oil for cooking

[Makes 3 1/2 cups]    Cooking time: 20 minutes

1/2 cup onion, chopped
1 tablespoon garlic, minced
1 tablespoon olive oil
1 bay leaf
1 teaspoon salt
1/8 pepper
2 tablespoons white wine

1. Place onion, garlic, olive oil, bay leaf, salt and pepper in a microwave-safe bowl (4 liter or 4 quart) and mix well. Make sure olive oil is well blended. Cover with a vented microwave lid and cook on HIGH (1200W) for 3 minutes.

2. Take out and stir until it becomes smooth.

3. Add tomatoes and white wine. Cover and cook on HIGH (1200W) for 5 – 6 minutes.

4. When it reaches a boil, take the cover off and cook 5 – 6 minutes. When ready to serve, remove the bay leaf.

* This is a convenient sauce for pasta or rice dishes, pizza, and anything else. Because it is full of tomatoes, it also provides lots of vitamin A.
