Red Chili Pepper & Garlic Dipping Sauce

[Makes 2/3 cup]    Cooking time: 5 minutes

1/4 cup vinegar
1/8 cup sugar
1 teaspoon salt
1 tablespoon soy sauce
1 tablespoon La Yu (spicy chili oil)
1 tablespoon red chili pepper, minced
2 teaspoons garlic, minced
2 teaspoons cornstarch

1. Place all the ingredients in a microwave-safe dish and mix until sugar dissolves.

2. Cook on HIGH (1200W) for 1 – 1 1/2 minutes.

3. Take out and stir until it thickens.

* This is a good sauce for steamed dishes with cod, salmon or chicken. It is also used as a salad dressing for vegetables, and a good sauce for pasta, or for Chinese noodles.
