Raspberry Jam
A very distinctive raspberry flavored jam

[Makes 2 cups]    Cooking time: 5 minutes
 

2 cups raspberries (8 oz.)
2 tablespoons sugar
1 tablespoon lemon juice

1. Place the raspberries, sugar and lemon juice in a microwave-safe bowl (3 liter or 3 quart)*

2. Cover with a vented microwave lid and cook on HIGH (1200W) for 2 minutes.

3. Take out and cool. The jam will thicken as it cools.

* When you make jam, it tends to boil over, unlike making compote. It is better to use a container that is 4 times larger than the amount of the fruit.
* When using plastic wrap as a cover, poke a hole in the center to release the steam.
