Blueberry & Apple Puffs
Well-balanced sweet & sour rolls

[Yields 32 rolls]    Cooking time: 45 minutes
 

1 package (14 oz.) machine mix bread flour (country white)
1 tablespoon (4 g) active dry yeast, included in the machine mix bread flour
1 cup low-fat milk
64 blueberries (3/4 cup)
1 medium apple, cut into 32 pieces
6 tablespoons sugar

1. Set aside 1/3 cup flour for flouring board.

2. Pour the milk in a microwave-safe plastic bowl (7 cups).* Cover with a vented microwave lid and cook on HIGH (1200W) for 40 seconds until it reaches 75 – 85 degrees F. Cool the milk, if it reaches over 85F. Yeast will not activate if milk is too hot.

3. Combine half of the flour and milk. Beat with a wire whisk until it becomes smooth. Add yeast and mix well.

4. Add the remaining flour and mix well with a wooden or rubber spatula until it becomes smooth. Shape into a ball.

5. Cover with a microwave lid and cook on HIGH (1200W) for 10 seconds.

Image of 32 pieces of dough on a board. 6. Place the basic dough onto lightly floured board. Roll out into 8x8-inch square. Cut into 32 pieces by slicing into quarters until there are 32 squares.

7. Shape each piece of dough into a ball by folding the sliced corners into the center and pinching the ends together. Place lightly moistened paper towel over the dough and rest for 10 minutes at room temperature.

8. Roll out on lightly floured board. Shape each piece into a 3-inch diameter circle.

Image of the dough with blueberries and apple inside arranged ready for microwave cooking. 10. Place parchment paper or waxed paper in microwave. Place the doughs and cook on HIGH (1200W) for 10 seconds.

11. Lightly grease or place a sheet of parchment paper on a baking sheet. Transfer the dough onto the baking sheet. Place a lightly moistened paper towel over it and let rest for 10 minutes.

Image of baked rolls 12. Remove the paper towel and bake at 400F for 10 – 12 minutes, or until it becomes golden brown on the upper rack of oven.

Image of coating baked rolls with sugar. 13. In a paper sack, place 3 tablespoons sugar. Put half of the baked rolls in the sack and shake. Repeat for the rest of baked rolls.

* A resin-treated plastic bowl works best (such as Ziploc). Dough does not stick and it is light enough to handle easily.
